Angel Eyes

Husarenkrapferln in German but maybe Angel Eyes sounds cooler. They’re small jam filled cookies.

Ingredients

  • 240g flour

  • 70g white sugar

  • 2 egg yokes

  • 1 egg white

  • 140g butter

  • chopped nuts (hazel/almond/walnuts) (optional)

  • redcurrant jam

  • icing sugar

  • pinch of salt

Directions

  1. Mix flour, sugar and salt.

  2. Mix in egg yolk.

  3. Cut in cold butter and knead into a smooth dough

  4. Rest dough in fridge for at least half an hour

  5. Roll dough into small balls and press little dips into the top witht he hande of a cooking spoon (or a pen)

  6. Brush each cookie with egg white and sprinkle with chopped nuts

  7. Bake at 200 degrees for 15-20 minutes

  8. Fill the “dips” with jam and once cooled dust with icing sugar
