Chewy and cinamonny and delicious!
Ingredients
500g almond flour
400g icing sugar (300g for the cookie, 100g for the glaze) + some for rolling
2 tbs honey
2 tbs cinnamon
3 egg whites (2 for the cookie, 1 for the glaze)
pinch of salt
Directions
Mix almond flour, 300g of icing sugar, cinnamon and salt.
Knead in honey and 2 egg whites until a dough forms.
Using icing sugar to prevent sticking, roll out dough to around 0.5cm and cut out star shapes.
Mix the remaining (1) egg white with the remaining (100g) icing suggar to form a glaze.
Brush the stars with the glaze, completely covering the tops.
Bake at 150 degrees for 10-15 minutes, before glaze starts to change colour.
