Vanilla Moons

Most peoples favourite out of all my christmas cookies.

Ingredients

  • 280g flour

  • 100g almond flour

  • 200g icing sugar (50g for the cookie, 150g for the coating)

  • 3 packs of vanilla sugar (about 6 tsp.)

  • 1 tsp. vanilla extract

  • 200g butter

  • pinch of salt

Directions

  1. Mix flour, almond flour, 50g of icing sugar and salt.

  2. Add vanilla extract and cut in cold butter. Knead into a smooth dough.

  3. Rest dough in fridge for at least half an hour.

  4. Roll dough into small cylinders, about as thick as a pen, and form into crescent shapes.

  5. Bake at 150 degrees for 10-15 minutes.

  6. While baking prepare the coating: mix the remaining (150g) icing sugar with the vanilla sugar.

  7. Coat cookies by rolling in the sugar mixture while they are still hot.
